Black Currant Sorbet

Makes 8 servings

1 cup + 2 tablespoons sugar
1/2 cup water
1/2 cup currant juice
1 quart fresh or frozen black currants
Juice of 1 lemon
 
In a medium saucepan, combine sugar, water, and currant juice; bring to a boil, then reduce heat and simmer for 5 minutes to completely dissolve sugar. Let cool. Transfer the sugar mixture, currants, and lemon juice to a blender or work bowl of a food processor; purée until smooth. Freeze according to instructions (home ice cream/sorbet machine) until smooth, firm, and frozen.

Plum-Cranberry Sorbet

1/2 cup sugar
1 cup no-sugar-added cranberry juice
1/2 teaspoon cinnamon
3 cups ripe plums, pitted and finely chopped
1 tablespoon lemon juice
1/2 cup cocoa nibs, for garnish
1/2 cup pistachio nuts, finely chopped, for garnish
Ice cream cups (optional)

Combine sugar, cranberry juice, and cinnamon in a saucepan and simmer until the sugar is fully dissolved. Add plums and simmer for five minutes more.

Transfer mixture to a food processor, add lemon juice, and purée until smooth.

Cool mixture thoroughly in the refrigerator for at least 1 hour. Put mixture in your ice cream maker and follow the manufacturer’s instructions for freezing.

Serve in individual cups or cones and sprinkle with cocoa nib-pistachio nut garnish.
